Healthy Olive Oil Granola Recipe

Looking for a healthy, after-school snack? This granola recipe will be a big hit!

INGREDIENTS:

In large bowl, combine the following:

3 cups old-fashioned oats
1 cup, chopped almonds
½ cup other nuts (walnuts or cashews, if desired)
1 cup raw pumpkin seeds, hulled
1 cup flaked (or raw) coconut
¾ cup pure maple syrup
½ cup light olive oil
½ cup packed brown sugar
1 teas. kosher salt
1 teas. cinnamon

DIRECTIONS:

Mix all above ingredients until all coated.

Pour onto ungreased cookies sheet. Bake 300 degrees 45-50 minutes until golden color.  Stir every 10-15 minutes.

When done, remove from oven, add 1 cup raisins and 1 cup dried cranberries (craisins) or 2 cups of any dried fruit.

After completely cooked, store in large airtight container.

Great added to yogurt or served over fruit.

Makes a perfect gift!
