Gram’s 7 Minute Clam Dip

Total time: 7 minutes

Serves 18 (serving size: about 2 tablespoons dip and 1/3 cup vegetables)

  • 1/2 cup 2% reduced-fat Greek yogurt
  • 1/4 cup clam juice
  • 2 tablespoons lemon juice
  • 1 (8-ounce) package 1/3-less-fat cream cheese, softened
  • 1/4 cup chopped chives
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 3 (6.5-ounce) cans chopped clams, drained

Place first 4 ingredients in a medium bowl; beat with a mixer at medium speed until smooth. Stir in chives, black pepper, salt, and clams. Serve with fresh veggies (suggested: sliced bell peppers and fennel bulbs).

Tex-Mex Beef and Bean Dip

Total time: 20 mins
12 servings (serving size: 1/4 cup dip and 5 chips)
  • 1/2 pound ground sirloin
  • 2 tablespoons no-salt-added tomato paste
  • 1 to 2 teaspoons chipotle chile powder (this is hot stuff!)
  • 3/4 teaspoon ground cumin
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 3/4 cup (3 ounces) crumbled queso fresco
  • 1/4 cup thinly sliced green onions
  • 3 ounces bite-size baked tortilla chips (about 60, such as Tostitos Scoops)

     

    Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain well; return beef to pan. Add tomato paste and next 4 ingredients (through diced tomatoes), and bring to a boil. Reduce heat, and simmer 5 minutes or until thick, stirring occasionally.

    Spoon meat mixture into a serving bowl; top with crumbled cheese and green onions. Serve with tortilla chips.
